Crunchy Chinese Pork Salad

Intriguing flavors and textures make this main dish salad an instant family favorite. Most of the ingredients are pantry staples. Make pork roast the night before and plan for this “planned over” supper or purchase deli pork roast. Pair with fresh breadsticks hot from the oven.

Ingredients

  • 3/4 pound roasted pork loin (cubed)
  • 4 slices bacon (diced)
  • 6 cups iceberg lettuce (torn)
  • 8 ounces water chestnuts (sliced, drained)
  • 1/2 cup green onions (sliced)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon ketchup
  • 1 teaspoon dry mustard
  • 3 ounces chow mein noodles

Directions

Prepare the Bacon and Pork

  1. Cook the Bacon:
    In a large skillet, cook the bacon over medium heat until crisp. Remove with a slotted spoon and drain on paper towels.
  2. Prepare the Pork:
    If using pre-cooked roasted pork loin, cut it into cubes. If preparing the pork loin fresh, roast it in the oven at 375°F (190°C) for about 25-30 minutes or until the internal temperature reaches 145°F (63°C). Let it rest, then cube it.

Make the Dressing

  1. Whisk Ingredients:
    Whisk together the soy sauce, honey, ketchup, and dry mustard in a small bowl until well combined. Set aside.

Assemble the Salad

  1. Combine Ingredients:
    Combine the torn iceberg lettuce, sliced water chestnuts, green onions, and cooked bacon in a large bowl.
  2. Add Pork:
    Add the cubed pork to the salad mixture.

Toss and Serve

  1. Add Dressing:
    Pour the prepared dressing over the salad mixture. Toss gently to coat all the ingredients evenly.
  2. Add Noodles:
    Add the chow mein noodles before serving and toss lightly to incorporate the crunch.
  3. Serve:
    Serve immediately paired with fresh breadsticks or your favorite side dish.

Tips for Serving

  • Make Ahead: You can prepare the bacon, pork, and dressing ahead of time and store them separately in the refrigerator. Assemble the salad just before serving.
  • Variations: For extra color and nutrition, feel free to add other vegetables like shredded carrots, sliced bell peppers, or snap peas.
  • Protein Options: This salad can also be made with leftover chicken, beef, or tofu for a vegetarian option.
