How to grow sprouts and microgreens

Sprouts: Soak a spoonful of seeds, then rinse and drain in a sprouting jar two or three times a day. Keep them out of direct sun and they are ready in about 3 to 5 days. Note that arugula seeds are mucilaginous and turn gel-like when wet, so many growers prefer the tray method.

Microgreens: Scatter the seeds densely across a shallow tray of moist soil or coir, mist daily, and give them light once they green up. No soil is required for the sprouts method, only a jar and water.

Harvest

Sprouts are ready in roughly 3 to 5 days. Microgreens are ready to cut in about 1 to 2 weeks, when the first true leaves show. Snip just above the soil line with clean scissors and rinse before eating.
