How to Grow Beet Microgreens

Tray Growing (Recommended)

While jar (sprouting) growing is possible, we recommend using the tray method with a growing medium for best results. Tray growing produces stronger, healthier microgreens with better yield and consistency.

  • 1. Soak Seeds
    Soak beet seeds in cool water for 8 to 12 hours before sowing. This helps improve hydration and supports more even germination.
  • 2. Prepare Your Tray and Growing Medium
    Use a shallow growing tray, about 1 to 2 inches deep, with drainage holes. Fill it with 1 to 2 inches of moistened seed-starting mix or another fine growing medium.
  • 3. Sow the Seeds
    Sprinkle the seeds evenly across the surface. Beet seeds are multi-germ seeds, so give them a little space to reduce crowding. Gently press them into the surface or cover very lightly with a thin layer of growing medium.
  • 4. Germinate
    Keep the tray in a warm spot, around 70°F, away from direct sun. Mist lightly only as needed to keep the surface from drying out. Once possible, switch to bottom watering to avoid excess moisture around the stems.
  • 5. Grow On
    After sprouting, place the tray under bright light or provide at least 10 to 12 hours of light per day. Keep the growing medium evenly moist, but not soggy. Good airflow will help keep the crop healthy.
  • 6. Harvest
    Beet microgreens are usually ready in about 10 to 14 days, depending on conditions. Harvest when they are 1 to 2 inches tall and have developed their cotyledons, or just before the true leaves become too pronounced.

Jar Growing (Alternative / Sprouting Method)

Beet seeds are not well-suited for jar growing due to their seed structure and uneven germination. For best results, we strongly recommend tray growing for this variety.

  • 1. Soak Seeds
    Soak the seeds in cool water for 8 to 12 hours.
  • 2. Drain Well
    Transfer the seeds to a clean sprouting jar with a mesh lid or sprouting screen. Drain thoroughly.
  • 3. Rinse and Drain Daily
    Rinse and drain 2 to 3 times per day. Keep the jar tilted upside down at an angle so excess water can escape and air can circulate.
  • 4. Expect Inconsistent Results
    Because beet seeds are clustered and germinate unevenly, jar growing may lead to patchy sprouting and a higher risk of poor airflow and spoilage.
  • 5. Harvest Early
    If using the jar method, harvest at the sprout stage. Do not expect the same size, yield, or quality as tray-grown beet microgreens.

Growing Tips

  • Bottom watering is preferred once seeds have germinated. This helps reduce excess moisture on the stems and lowers the risk of disease.
  • Beet microgreens prefer consistent moisture, but they do not perform well in overly wet conditions. Make sure your tray has drainage holes and never let it sit in water for too long.
  • Because each beet seed can produce multiple shoots, avoid sowing too densely.
  • Harvest before the greens become too mature if you want the most tender texture.
  • For storage, keep harvested beet microgreens dry, unwashed, and refrigerated in an airtight container for up to one week.
