What makes Chioggia beets unique?
Chioggia, an Italian heirloom, is famous for its concentric red-and-white candy-stripe rings when sliced. The flavor is exceptionally sweet and mild, and the rings are prettiest when served raw or lightly cooked.
When should I sow Chioggia beet seeds?
Direct sow 2-3 weeks before the last spring frost, then make successive sowings every few weeks, and again in late summer for fall harvest. Sow seeds 1/2 inch deep.
How long do Chioggia beets take to mature?
Roots are typically ready in about 55-60 days. Harvest them on the smaller side, around 1.5 to 2 inches, to keep the striping vivid and the flavor sweet.
How far apart should I thin the plants?
Thin seedlings to 3 inches apart in rows 12 inches apart. Grow in full sun to part shade in loose, well-drained soil for the best roots.
How many seeds are in the packet?
Each packet contains approximately 125 seeds. Note that each beet seed is actually a cluster, so expect several seedlings per seed.

Do the rings stay after cooking?
