What shape are Cylindra beets?
Cylindra is a Danish heirloom that grows long, cylindrical roots 6-8 inches deep instead of round globes. The uniform shape makes it ideal for slicing even, coin-sized pieces for pickling and canning.
Why choose Cylindra over a round beet?
Because the roots grow long and narrow, you get many more uniform slices per beet and can fit more plants in a row. The flesh is sweet, tender, and holds its color well when cooked.
When should I sow Cylindra beet seeds?
Direct sow 2-3 weeks before the last spring frost, 1/2 inch deep. A late-summer sowing also gives a good fall crop for storage.
How long until Cylindra beets are ready?
Cylindra roots typically mature in about 55-60 days. Because they push up out of the soil as they grow, they are easy to check and harvest.
How far apart should I space them?
Thin seedlings to 3-4 inches apart in rows 12 inches apart, in full sun and loose soil. Deep, loose soil lets the long roots develop straight.
