White Sweet Spanish is a large, mild white onion that mirrors its yellow Sweet Spanish cousin in size and sweetness but offers snowy-white flesh and skin. Grown from these heirloom Allium cepa onion seeds, it forms big globe-shaped bulbs with a delicate, sweet flavor that shines both raw and cooked. It is a long-day variety suited to northern gardens.

Who it's for

Perfect for home gardeners in northern and central regions who want a mild, sweet white onion for fresh use, garnishes, and general cooking.

How & when to plant

Start onion seeds indoors 8–10 weeks before your last frost, or direct sow once the soil is workable. Sow 1/4 inch deep and thin to 3–4 inches apart in rows 12–18 inches apart. Give full sun (6+ hours) and consistent moisture in loose, fertile soil. As a long-day type it grows best in USDA zones 3–7.

Harvest

Bulbs mature in about 110–120 days. Harvest once the tops yellow and topple over, cure the bulbs in a dry, airy place for 2–3 weeks, then store necks-dry in a cool, dark spot.

Benefits & uses

Its mild sweetness makes it a favorite for raw slices in salads, tacos, and sandwiches, and it softens into a gentle, savory base for soups and sautés. The clean white color is attractive on the plate and in the kitchen.

FAQ

Start seeds indoors 8-10 weeks before your last spring frost and transplant out once the soil can be worked, or direct sow in early spring. It is a long-day variety suited to the northern and central U.S.
They produce large, globe-shaped white bulbs with a mild, sweet flavor that is excellent raw in salads, on burgers, or lightly cooked. The pure white flesh also makes them a favorite for fresh use.
Expect about 110-120 days from transplant to harvest. The bulbs are ready when the tops yellow and bend over.
Space plants 4 inches apart in rows 12-18 inches apart, in full sun and loose, well-drained soil. Because these onions grow large, spacing matters for good bulb size.
Each packet holds approximately 250 seeds, plenty for a full row of sweet white onions.
White sweet onions are best used fresh and have shorter storage life than pungent storage types. Cure them well and use within a few months for best quality.
It shares the same large size and sweet, mild flavor but has white skin and flesh instead of golden-brown.
White onions store reasonably well when cured, though yellow types generally keep the longest; use white Sweet Spanish within a few months for best quality.
