Mache, also called corn salad (Valerianella locusta), grows tender little rosettes of dark green leaves with a mild, nutty flavor. These mache seeds produce one of the most cold-hardy greens you can grow, thriving in the chill of late fall and early spring when almost nothing else will. It is a gourmet European salad green that is surprisingly easy in the home garden.

How & when to plant
